Marsala is a very liqueur wine, produced mainly in Sicily, it is the first DOC wine in Italian wine history, made known in 1773 by the English merchant J. Woodhouse, who, landing with his ship in the port of Marsala, had the opportunity to taste the delicious wine, which he also brought to England, starting its marketing. This wine was produced with the soleras method which consists in overlapping oak barrels, which are filled with wine always starting from the top and the same was then taken from the bottom. The peculiarity of this wine is given by the vine plants coming from Greece, which are very short and have very large leaves and this peculiarity allows a slow maturation of the bunches of grapes, which are not exposed to the sun too directly, thus acquiring that classic very sweet flavour. Marsala can have different colors depending on the grape with which it was produced, we will have a gold Marsala, if produced with white grapes, amber, if produced with white grapes and 1% of must, ruby, if produced with grapes red wine and the addition of 30% white wine. It can also be dry if the sugar content does not exceed 40 g. per liter, semi-dry, if it does not exceed 100 g. of sugar per liter and sweet if it has more than 100 g. of sugar per litre. The value of Marsala varies depending on the years of aging and on the additions made (there is also an egg variant). This fortified wine is widely used in cooking to prepare delicious flavored white meats, but also to enhance the flavor of desserts and cakes such as cannoli and Sicilian cassata.
