Tercet (Marc Soyard) - Hautes-Côtes de Beaune 2019

Marc Soyard was looking for a Cote Beaune terroir which was high and therefore with high acidity. He found it in the Echevronnes near Corton, closest behind Pernand Vergelesse. The plot is located at an altitude of 400 meters.

The stems are 40 years old and in canvas / limed soil and exposed to the south, so there are excellent opportunities for maturity and acidity at the same time.

In particular, the grapes are pressed on site in the Echevronnes without the addition of sulfur and then transported to Marc's cellar in Marsannay. In general, the least possible sulfur is used in the vinification. The must is aged for 1 year in oak barrels, of which 10% are new.

The yield is for one year with a maximum yield of 3,000 bottles.
