Manual harvesting of selected bunches carried out towards mid-September, drying takes place with natural over-ripening in the fruit cellar with a weight loss of the grapes of 40-45%. The harvest takes place with the best grapes, harvested high up in the hills, and left to dry in the fruit cellar for about 5 months. After soft pressing, the wine ferments in steel and matures in new barriques for 14 months, in large barrels for 2 months and in bottles for approximately 10 months. Sweet wine, intense ruby ​​red in colour. The bouquet is extremely broad and varied: notes of dried fruit and blackberry jam are accompanied by spices, in particular cloves and cinnamon, and hints of violet. It enchants with its incredible freshness, which distinguishes it from any other passito wine.

Giovanni Allegrini, a symbol of Valpolicella, was a great lover of Recioto. Since 1990, his children Walter, Marilisa and Franco have dedicated this wine to their father, an extraordinary innovator, the same one with which he used to measure the skill of the winemakers of the time. Recioto is one of the oldest wines in the world, known since Roman times. It is sweet, unique in its kind, capable of promoting meditation and accompanying the most joyful occasions in life. For everyone today it is the noble and recognized "progenitor" of Amarone.
