Tercet (Marc Soyard) - Hautes-Côtes de Beaune 2019

/ #11248699
Size: 750 ml (Standard)
White
Quantity: 2 bottles (total price)

Marc Soyard was looking for a Cote Beaune terroir that was high and therefore with high acidity. He found that in Echevronnes, which is near Corton, almost behind Pernand Vergelesse. The plot is located at an altitude of 400 metres.

The vines are 40 years old and in clay/calcareous soil and exposed to the south, so there are excellent opportunities for ripeness and acidity at the same time.

The grapes are especially pressed on site in Echevronnes without the addition of sulphur, and then transported to Marc's cellar in Marsannay. As a whole, as little sulfur as possible is used in the vinification. The must is aged for 1 year in oak barrels, of which 10% are new.

The yield is for a year with a maximum yield of 3,000 bottles.
